Omakase

Omakase

Translating to ‘I leave it up to you,’ omakase sees diners enjoy a multi-course menu chosen by the chef based on seasonal ingredients sourced that day. Served at the restaurant’s carefully crafted Japanese seven-seat hinoki wood counter, Aman New York’s omakase experience invites guests to observe the theatre of the food preparation, coming face-to-face with Chef Takuma Yonemaru as he works artfully to create each bespoke menu.

Mindfully Sourced

An exclusive seven-seat dining area, Nama’s prized Japanese hinoki-wood counter offers an atmospheric platform for personal tasting journeys. Each day, the menu is chosen based on the most exceptional produce available at the Toyosu market that morning. Ingredients are sourced with utmost care, selected for their freshness, peak quality and alignment with the season, resulting in a fine dining experience that differs every time.

Through the Senses

A dining experience akin to theatre unfolds at the omakase counter. With passion and flair, the chef presents a dish sequence of artful displays and faultless flavours, taking diners on a journey of tradition and progression, and colour and texture appealing to all five of the senses.
