Drawn from traditional Balinese word for twilight—the soft, golden hour just after sunset—Sandikala encapsulates the convergence of light and shadow, a moment believed to hold both spiritual and natural significance in Balinese culture. Elevated above the resort's iconic three-tiered pool, Sandikala embraces this sense of stillness against the setting sun, with panoramic views of the Lombok Strait. Serving a refined selection of Indonesian and Western dishes, the menu features fresh ingredients from the resort's organic garden.



Featuring a vast range of herbs, fruit and vegetables, Amankila’s organic garden provides the resort’s kitchens with everything from sweet potatoes, tomatoes and spinach to chillies and passion fruit. Quails are bred to provide Sandikala with their eggs, and a coffee plantation will eventually provide the resort’s own beans. These ingredients take centre stage at Sandikala, where the freshness of the land is reflected in every dish.
The connection between Amankila’s cuisine and its origins is ever present as you dine on whole salt-baked market fish overlooking the ocean or Balinese home-smoked roast duck with the fertile slopes of Mount Agung at your back.

There is no better way to start the day than breakfast with a view. As the sun's first rays light up Mount Agung and the rice terraces of the Buitan Valley, relax in Amankila's open-air bale atop Tamansari Hill.
A delicious breakfast picnic will be served by your own personal waiter. Sip on freshly squeezed juice as you take in cascading views across Bali's waking island.

Breakfast on the sea
With the rush of the turquoise sea against the bow, a colouful world below and dawn breaking on the horizon, Amankila's Sunrise Cruise is an unforgettable way to start your day.
Board one of the resort's traditional Jukung-styled outrigger boats before sunrise and watch from the water as the island is painted in living colour by the sun's first rays. Breakfast onboard in a secluded bay, then snorkel and relax to your heart's content.
