Taking its inspiration from the traditions of Italian cooking, Aman’s signature restaurant, Arva champions dishes that are simple and full of flavour. With a focus on seasonal, locally-sourced ingredients and classic recipes, prepared with care and a touch of elegance, menus are designed to be shared and savoured, bringing people together around the table.


At the helm, Chef Francesco Balloo brings with him over 15 years of experience in leading European kitchens, including working in Three-Michelin Star restaurants in France, the United Kingdom, Italy and Spain. Hailing from Porto Santo Stefano, Tuscany, his cooking combines his authentic Italian heritage with refined international techniques.
Enveloped by lush greenery, Arva finds home in a shaded spot, with alfresco seating overlooking the glassy, central pool. Inside, tradition meets contemporary elegance with handcrafted tiles, tadelakt walls and soft lighting creating a warm and intimate atmosphere.
Fresh, seasonal ingredients are sourced from the hotel’s organic garden and local suppliers. Indulge with Raviolo all’Astice, a delicate, homemade pasta inspired by the Tuscan coast, or try Agnello e Caponata, a Moroccan lamb fusion with Italian peppers, aubergine and capers. Each dish captures the warmth and tradition of Italian cooking.
