Pool Terrace & Olive Grove

As the indolence of the afternoon washes over Amanjena, retreat to the shaded arches of the open-air Pool Terrace for a menu of cooling classics, including salads, snacks and sides, as well larger midday mains, including club sandwiches and burgers. House-made pizzas arrive from the wood-fired oven in the adjoining Olive Grove. As dusk bathes the rose-pink walls in a golden light, raise a glass to the day with a selection of cocktails, champagnes and wines.

A swimside setting 

After a morning swim, the Pool Terrace's arches provide shade. Retreat to the rose-toned corridors around the pool, enjoying the informal waterside setting. The Olive Grove, with tables amid twisted trunks and manicured lawns, features a wood-fired oven for pizzas and additional seating under Amanjena’s ancient olive trees.

Lighter lunchtimes

In addition to delicately hand-tossed pizzas – charred and topped with buffalo mozzarella, olives and local sardines – the menu offers Levantine dips with warmed Berber bread, Fattoush and Caesar salads, and a variety of grilled meats and seafood. Homemade ice creams and sorbets offer a refreshing break between swims.

Refreshing drinks

Local wines and vineyards across Morocco grace the Pool Terrace & Olive Grove menu. Aman hotels around the world inspire cocktails, with unique flavours from Italy, Thailand and beyond, including the signature Jena Breeze – a gin-and-tonic-inspired drink infused with Moroccan mint and anise-flavoured Marie Brizard liqueur.

Pizza Bar

Daily 6.30-10pm until 31 August 

Throughout the summer season, the tranquil Olive Grove welcomes the  Pizza  Bar  Pop-Up  each evening. Chef Francesco Ballo’s signature Pizza  in Teglia, a traditional Roman-style  pizza  known for its light, airy dough and crisp texture, is served alongside a selection of fresh carpaccios, classic Italian desserts, and inspired cocktails.
