Blending Javanese tradition with broader Indonesian heritage, Taste of Amanjiwo invites Aman Tokyo guests to expand their culinary horizons, with a menu of dishes by the Central Java resort’s executive chef, Reza Kurniawan. Highlights include Jiwo Gohu Tuna, Amanjiwo’s contemporary interpretation of a traditional fish dish from the Maluku and North Maluku islands; Lesah Ayam, a Central Javanese specialty of rich coconut milk broth; and Nasi Goreng, an iconic sweet, spicy and savoury fried rice.

Through appetisers to desserts, Chef Reza’s menu showcases Indonesia’s vibrant ingredients, fragrant spices and expressive flavours, accompanied by sweeping panoramic views of Tokyo city.
