Lychee Parfait

Carrying the fresh scent of spring, lychees are the inspiration and star ingredient of this fruity parfait – perfectly paired with a glass of Champagne (or a cup of fragrant tea or coffee) to toast the season. Available from 15 April at The Lounge by Aman, this layered dessert features lychee compote, peach jasmine tea jelly and tart grapefruit, as well as refreshing lychee sorbet, yoghurt and grapefruit granita. Finishing touches are apricot-scented amaretti and lychee espuma with ginger-flavoured opaline.
