Inspired by  Mediterranean living, this dinner celebrates cuisine shaped by a deep connection to the land and sea. Echoing Amandari’s appreciation for nature and simplicity, the menu features dishes such as mahi-mahi tajine and orange cake with saffron ice cream, showcasing age-old culinary tradition. 

Before modern borders, the waters between Indonesia and India connected cultures through the ancient Spice Route. Inspired by this shared heritage, Taste of Asia celebrates these enduring ties through an evening of Indian cuisine, featuring dishes such as Kacchi Mirchi ka Murgh and Beef Khada Masala.

Drawing on seasonal ingredients and the time-honoured techniques of Japan’s culinary heritage, this exclusive evening presents a thoughtful journey through familiar flavours, from nasu miso to organic chicken teriyaki, before concluding with a delicate Japanese cheesecake.

A series of sculptural works shaped from reclaimed wood, Vessels of the Earth present the forms which draw from observed natural structures, translated and reworked through carving. Each piece is unique with openings, grain and irregularities that are retained and adapted in the making. Each piece functions as a vessel while retaining a sculptural quality. 

'Purnama' means 'full moon' in Indonesian: complete, infinite and perfect. On these sacred evenings, Amandari marks the occasion with a thoughtfully curated culinary gathering. A bespoke menu highlights local ingredients, seasonal flavours and Balinese favourites, served beneath the moonlit sky - a quiet celebration of light, renewal and the rhythms of the valley.

Piodalan or Odalan is a traditional village celebration observed throughout Bali, marking the anniversary of the consecration of a mrajan (family temple) or a palinggih (sacred shrine). At Amandari's temple, the Odalan ceremony spans three-days and features traditional dance and orchestra performances, accompanied by blessings, prayer sessions, and a bustling Balinese food market.
