From Aman Tokyo’s lobby, sweeping panoramas stretch out from the Imperial Palace gardens, across the city, to Mount Fuji and beyond, while a soaring 30-metre ceiling – Hill’s interpretation of a Japanese lantern – appears cathedral-like above with layers of washi paper stretched wide over shoji framework; delicate in beauty yet directing natural light with commanding presence. While at first glance grand in its proportions, Aman Tokyo’s ability to maintain connection with the capital below is integral to the experience. As strains from a traditional Koto player drift through the space, a sense of grounding ensues, a feeling of home synonymous with an Aman welcome.

This spans from Aman signature concept, Arva – where simple ingredients are transformed through precision preparation into bold, beloved dishes that give the comfort of an Italian family kitchen to Musashi by Aman, where Master Chef Musashi upholds the art of Edomae-style sushi with dedication and passion.
Centred around an intimate Hinoki wood counter, Musashi’s omakase experience is shaped entirely by the finest ingredients, selected personally by Musahi each morning from Tokyo’s markets. But the experience extends far beyond this dining tradition. Since 2020, Musashi has cultivated his own Hitomebore rice in the pure waters of Yamanashi Prefecture, transforming it into the shari that forms the foundation of every bite. His craftsmanship can also be found in the restaurant’s hand-crafted ceramic tableware and sake cups, alongside original craft spirits, produced from his rice harvests.
