From Monday to Friday, the Beach Club welcomes visiting Chef Nat from Nama at Amanpuri each evening, to share his Japanese cuisine, defined by purity, seasonality and respect for natural flavours. Rooted in Nama’s philosophy of simplicity and precision, each dish reflects time-honoured techniques, thoughtfully reinterpreted for Amanoi guests in an elegant coastal setting.

Led by Executive Chef Reynaldo Deluna (Rey), whose nearly two decades of experience across Europe, the Americas and Asia inform his refined approach to cuisine, Spanish Night brings the vibrant flavours of Spain to Vietnam’s shores, every Monday to Friday evening. Showcasing seasonal, locally sourced ingredients in modern interpretations of traditional recipes, Chef Rey crafts an immersive dining experience that captures the essence of Spanish gastronomy, celebrating its bold flavours.

Discover the flavours of Vietnam in a private hands-on cooking class at the Rock Studio, enveloped by giant granite boulders. Select three dishes from favourites including pho bo (beef noodle soup) and goi cuon (rice-paper rolls). Afterwards, sit down to savour the dishes in this dramatic location.
