Enjoy a serene, early-summer evening with this light and elegant parfait layering Japan’s distinctive citrus fruits – Setoka, Dekopon and Yuzu – with cheesecake cream and an assortment of fine cheeses, including ricotta. 

Chamomile-infused jelly forms the foundation, complemented by citrus compote, smooth cream and light sorbet and granita. Finished with a pavlova adorned with carefully selected seasonal citrus, including Kiyomi orange and Dekopon, chosen daily and served with a maple yuzu sauce on the side, gently enhancing its mellow richness.
