Designer, author and Michelin-starred chef, Davide Oldani is Aman Venice’s creative consultant, producing innovative signature Venetian dishes that make use of the freshest seasonal ingredients
 

 

Chef de Cuisine Andrea Torre works closely with Davide on the ever-evolving menu

Trained in Rome, Andrea has honed his skills with Mediterranean produce in some of the finest kitchens in Milan, London and Istanbul

With fish fresh from the Adriatic and produce selected daily at the famed Rialto market, the menu remains seasonal, local and refreshingly new: try the crab salad with avocado, green apple and chilli, and Davide Oldani's signature spaghetti with pecorino, cracked black pepper and horseradish
