Summer in the city
From the sprawling metropolises of New York and Tokyo to the 100-island capital of Italy’s Veneto region, Aman’s urban sanctuaries come alive in the summer months.
Three leading Aman chefs will come together from 18-21 September to present a trio of menus amid the opulent backdrop of Aman Venice. Surrounded by the Palazzo Papadopoli’s Rococo artworks and Tiepolo frescoes, chefs Matteo Panfilio of Aman Venice, Hiroyuki Matsuo of Aman Kyoto and Masakazu Hiraki of Aman Tokyo will showcase the flavours of their home kitchens. Try a Japanese-infused afternoon tea and a pre-dinner menu of Venetian cicchetti in the Bar, before the grande finale – a Six-Hands Dinner of fine-dining fusion fare at Arva that whisks diners through pink-prawn carpaccio, wasabi risotto and matcha-tea ice cream.
As dusk settles across the Grand Canal, the Bar will also serve a select menu of Venetian cicchetti between 7-9.45pm. With the trio of guest chefs in residence, La Serenissima's famous snack food will be reimagined afresh with innovative Japanese flavours, serving up soft-shell crab with Campari sauce and tea-smoked yellowtail with soy powder. Cocktails at sunset are a must.
The grand finale, will see a six-course menu of creamy cod tempura and shiso sorbet with sake foam served at Arva at Aman Venice. Choose to pair it with the afternoon tea or cicchetti menu, or save this multi-course fusion feast for a separate day. From 3-5pm each day in the Bar, a Japanese afternoon tea will use the ingredients of Kyoto – including dainagon azuki red bean, sweet and sour yuzu, and organic matcha grown at an altitude of 368m – to create finger sandwiches, scones and a selection of cakes and pastries. Don’t miss the brown-sugar mizu manju sweet buns with pistachio ganache.
