A traditional German pastry, Stollen epitomizes Christmas for many. This season Aman Kyoto’s pastry team, led by executive pastry chef Hiroyuki Matsuo, will bake Yuzu Stollen for guests from near and far to delight in using Yuzu that grows in the forest garden of the resort. Raisins, organic almonds, and yuzu are kneaded into the dough and finished with cinnamon sugar to create the iconic pastry, with the aromatic zest and unusual flavour of yuzu enhancing each bite.
