The art of washoku
Meaning 'raw' in Japanese, Nama follows Japan's Unesco-recognised tradition of washoku, a style of cuisine that elevates cooking to an art form, often taking years for chefs to perfect. Exquisitely crafted sushi and sashimi are at the heart of a menu that celebrates the finest seasonal ingredients, prepared using techniques that bring essential flavours to the fore.
Beauty in simplicity
The secret to washoku lies in the chef’s understanding of an ingredient and how to isolate and amplify the essence of each component of the dish, resulting in beautifully clean and balanced flavours on every plate. Though the process of preparation can be highly complex, washoku is at heart a celebration of simplicity.
A sense of place
Specialist produce is obtained direct from the markets of Osaka and Kyoto so that dishes can be crafted with absolute authenticity: Phuket's tropical setting also offers Nama’s chefs a cornucopia of exceptional ingredients on our doorstep, sharing space on the menu with Japanese delicacies such as chargrilled Wagyu beef and black cod.
Omakase experience
Omakase is a revered culinary tradition that epitomizes the deep bond of trust between the chef and the guest. In Japanese, "Omakase" translates to "I leave it to you," inviting diners on a journey of culinary discovery. The chef meticulously curates a menu that highlights the season's freshest and most exquisite ingredients, ensuring each dish is a masterpiece of flavor and presentation.
At Nama Omakase, we offer an intimate dining experience with two seatings each evening, at 6:00 pm and 8:30 pm, from Wednesday to Sunday. With seat limitation, guests are guaranteed an exclusive and personalised experience.
