Set amid olive groves and pine forests near the ancient city of Ephesus, boutique winery Paşaeli specialises in hand-crafted, hand-harvested grapes, producing sometimes as little as 500 bottles per label. 

Aegean-region Selendi Winery is owned by respected Turkish businessman, Akin Ongor. Its site near Akhisar was selected with guidance from French oenological consultant, Bernard Grandchamp, with optimal grape varietals cloned to fit Selendi’s specific terroir. 
 

Likya Wines, in Antalya's mountain village of Elmali, is located at an altitude of 1,100 metres and specialises in high-altitude Lycian wines. Founded by two brothers, the winery showcases forgotten grapes, including the 200-year-old Acikara, successfully propagated after 16 years and brought back to life from the ancient wine city of Lycia.  
 

Caeli Winery on the protected Gallipoli Peninsula practises a deep-rooted planting pattern that allows vines to penetrate further, enabling higher-concentration grapes with a rich taste profile. The Aegean’s cooling currents and shade from neighbouring pines creates a natural microclimate, resulting in a temperate terroir that allows the grapes to mature slowly.
