In the warm and temperate climate of Shōdoshima, known as ‘Olive Island’, Mission olives grow much like they do in California. On Yagi Farm, the olive groves are harvested by hand, and the freshly picked olives are pressed and bottled within six hours. It is only this exquisitely pure, single-estate olive oil that is used by Aman Kyoto's chefs. Guests can also purchase a bottle of this silky, green-apple scented olive oil.
