Taste summer with Aman Tokyo’s new Parfait a la Peche. Featuring ripe and juicy summer peaches, its base is made from almond blanc-manger with prune and nectarine compote, vanilla bavarois and speculaas. Next come roasted almonds and sublime layers of peach compote, fresh peaches, raspberry sherbet and litchi granite. Above that, generous dollops of red currant and hibiscus jelly are topped with candy tuiles, Aman’s logo in chocolate and scattered gold foil.
