The Restaurant by Aman specialises in cuisine from Italy’s Veneto region on the Adriatic Sea. Japanese and Italian produce are expertly combined, and abundant seafood is a highlight of the menu, including saffron tagliolini, hokkaido prawn and broad beans. Exceptional meats are sourced for dishes including Italian-style grilled Wagyu T-bone steak

Masakazu strives to create original dishes using fresh, seasonal Japanese and traditional Italian ingredients, with over 17 years’ experience working in Venice

 

Award winning Chef de Patissier, Yoshihisa Miyagawa 

Moving to France in 2004, Yoshihisa gained experience at Laduree and Bellouet Conseil in Paris, going on to win multiple awards for his work with chocolate

 

A STELLAR COLLECTION OF WORLD WINES

The impressive glass-fronted wine cellar rises eight meters. The vast array of bottles is sourced from exclusive winemakers around the globe – especially Italy – such as the rich Amarone red and dry Soave white, both from the Veneto region
