The arrival of the new season is celebrated in the Aman Kyoto kitchen with the creation of a new cherry-pink pound cake, made to capture the fragrances and flavours of spring time. To create the cake, Sakura (cherry blossom) paste is kneaded with Uguisu-mame – green peas cooked in sugar and known as ‘bush warbler beans’ in reference to the Japanese bird that has come to symbolise springtime. A sprinkle of salted cherry blossom is the finishing touch.
