Flavours synonymous with autumn are some of the most rich, earthy and colourful. To celebrate the season, at the hotel’s Arva restaurant guests are invited to experience a new menu, showcasing the humble mushroom; one of autumn’s favourite ingredients. Using a variety of cooking techniques, Arva’s Chefs have created several new dishes that use different mushroom varieties combined with fresh ingredients sourced from across Japan.
Dishes include a starter with ezo deer and shiitake mushrooms, known for their umami flavour, and a unique pasta dish inspired by the savory crepe, combining porcini mushrooms with nutty fontina cheese and notes of honey. In addition, the marriage of ingredients from the sea and mountains can be enjoyed in dishes such as Aqua Pazza – an authentic Italian recipe of fish poached in broth. Freshly shaved autumn truffle can also be added to any dish.
