The season for asparagus in Japan, spring will see Aman Tokyo celebrating the delicate umami flavour of this versatile vegetable with its annual Asparagus Fair. Executive Chef Masakazu Hiraki will present special dishes including a green risotto with Sakura shrimp, and white asparagus with soft-poached egg, available a la carte at lunch and dinner, and as part of a six-course set dinner menu.
