Native to Kyoto and Hyogo, the Tamba chestnut is revered for its sweetness and mellow flavour. To celebrate autumn, Aman Kyoto’s pastry chefs have used this local ingredient to create a sublime seasonal Mont Blanc – a six-layer combination of chestnut cream, black soybean brulée, Wasanbon whipped cream, matcha ganache, fluffy chestnut mousse, and a hazelnut financier for the base.⁠
